The Structural Characteristics and Bioactivity Stability of Cucumaria frondosa Intestines and Ovum Hydrolysates Obtained by Different Proteases

The study aimed to investigate the effects of alcalase, papain, flavourzyme, and neutrase on structural characteristics bioactivity stability Cucumaria frondosa intestines ovum hydrolysates (CFHs). findings revealed that flavourzyme exhibited highest hydrolysis rate (51.88% ± 1.87%). At pH 2.0, solubility hydrolysate was lowest across all treatments, while at other levels over 60%. primary structures different proteases were similar, whereas surface hydrophobicity influenced by types used. produced also analyzed for their absorption peaks antioxidant activity. had β-fold (1637 cm−1), papain N-H bending vibrations. tertiary structure CFHs unfolded proteases, exposing aromatic amino acids red-shifting λ-peak hydrolysate. alcalase showed better activity in vitro than hydrolysates. displayed excellent pancreatic lipase inhibitory during gastrointestinal digestion, indicating potential use as antioxidants food pharmaceutical industries.
